Last night I came up with the easiest and most yummy blueberry almond "bread". It could also be used to make muffins I think. I basically took a yellow cake mix, added a cup of water,one 8 ounce container of 0% fat Greek yogurt, and one tablespoon of almond extract which I think makes most baked goods more moist and delicious. I mixed all the ingredients and then added in defrosted frozen blueberries that I rinsed (I reserved the juice for the icing). Bake at 350 F until golden brown on the top, then cool. Once cool I drizzled the loaf with a simple powdered sugar and blueberry juice icing (you want the icing to drizzle off the spoon easily), fresh blueberries, and sliced almonds. It was extremely moist and super yummy. I bet you could use the mix as a base to add any fruit you want (Strawberries, raspberries, pineapple, coconut, apple cinnamon, etc...).
